Fried Zucchini (Googootz)

There are so many things that remind me of my grandmother, but none as much as Googootz! My grandmother called fried zucchini googootz. Googootz is actually a slang word for cucuzza, a type of gourd found in italy. This can be served as an appetizer or as a side dish. It’s very simple and is always a big hit with my family.

Fried Zucchini Ingredients:
1 large Zucchini
2 eggs
1/4 cup milk
1 cup all purpose flour
2 cups italian style bread crumbs
1 1/2 cups canola or vegetable oil

Fried Zucchini Method:
Prepare a breading station by putting the bread crumbs and flour in two separate dishes and another with the eggs and milk combined. Beat the eggs until fully combined.

Heat a skillet on med/high heat and add vegetable or canola oil.

Slice the Zucchini in 1/4 inch slices. First coat the zucchini in the flour, then the egg wash and finally the bread crumbs.

Fry in the oil until golden brown (approximately 2 minutes on each side).

Place them on a paper towel and salt immediately after removing from the pan.

These disappear very fast so you might want to double the recipe!
